Porky's meats are always SLOW COOKED over hickory wood. As Earl says, "Burn 'em the right way!" Each slab of ribs is trimmed, and the membrane is removed to achieve Earl's tight specifications. Porky’s never serves boiled or baked meat. Every pork shoulder is hand-pulled and smoked up for to 16 hours, and ribs are cooked for up to 9 hours!
